Dutch Oven Peach Cobbler
Summer is the perfect time of year for a yummy peach cobbler.
Ingredients:
- 2 (15 oz) cans canned peaches, drained
- 1/4 cup and 2 Tbsp sugar, divided
- 1 Tbsp cornstarch
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 Tbsp honey
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp coarse sea salt
- 1/2 cup butter, cold and cut into 1/2-inch cubes
- 3/4 cup milk
- Vanilla bean ice cream, for serving
Method:
- Preheat oven to 375 degrees. Lightly grease a Dutch oven with cooking spray and set aside.
- Combine peaches, 1/4 cup of sugar cornstarch, cinnamon, ginger, honey, and vanilla in a large bowl and toss to coat. Transfer to prepared Dutch oven and set aside.
- Combine flour, remaining sugar, baking powder and salt in a medium bowl. Add Butter and combine using your fingertips or pastry cutter until mixture resembles course cubs. Pour in milk and stir until just combined.
- Top peach mixture evenly with dollops of biscuit batter. Bake until biscuitsts are golden-brown and peaches are bubbling about 30-35 minutes.
- Cool cobbler for a few minutes before topping with ice cream.
